Low-fat Chicken Alfredo

This recipe is considered a healthy pasta dish with only 324 calories and 5g of fat per bowl. It can be made within 20 minutes with limited ingredients which are always available in the kitchen. This recipe encompasses fresh seasonal vegetables and pasta with low fat and healthy protein.

Chicken Alfredo

Preparatory Time: 15 Minutes

Ingredients:

  1. 200g chicken (breast)
  2. 2 garlic minced cloves
  3. 120ml chicken stock
  4. 150g linguine pasta
  5. 120ml semi-skimmed milk
  6. 40g spinach
  7. 10g parmesan
  8. 1 tbsp flour
  9. Garlic low-calorie oil spray
  10. Bowl

Cooking Direction

Oil the frying pan with garlic low-calorie oil spray, then add the chicken breast with enough amount of salt and pepper. After 5-6 minutes of thorough cooking, remove the cooked chicken from the pan and keep it aside. The next step is followed by cooking the pasta. Cook well the pasta with enough water in the pan. Do not cook it as it becomes too soft. The next step contains the making of the alfredo sauce which possesses the minced garlic and sauté for one minute in medium heat cooked in the same pan in which the chicken is cooked. Slightly start to sprinkle the flour over the garlic and slowly add the chicken stock into it with constant stirring. Add the milk slowly and thoroughly stir them allowing the chicken to boil in the sauce. When the sauce becomes thick, add spinach and stir till it gets wilts. Then remove the sauce from the heat and add it to the cooked pasta with sliced chicken in the dish and serve it before it cools.

Preparatory time– 30 minutes

Ingredients:

  1. Chicken- 1-1/2 Kg (8 large pieces)
  2. Water- 1/2 cup
  3. cooking oil- 1/4 cup
  4. coconut-1/4 cup (soaked In 1/2 cup hot water)
  5. medium onion- 1 (finely chopped)
  6. green chilies-4  (thinly sliced)
  7. cinnamon- 2 Inch piece
  8. bay leaves- 2
  9. yogurt- 4 tablespoon
  10. whipped cream-4 tablespoon
  11. hot milk- 1 tablespoon
  12. ginger garlic paste- 1 teaspoon
  13. saffron- 1/4 teaspoon
  14. few coriander leaves, finely chopped
  15. Dry Masala – grind these ingredients below.
  16. coconut desiccated- 2 tablespoon
  17. cumin seeds- 1 teaspoon
  18. poppy seeds- 1 teaspoon
  19. turmeric powder- 1/4 teaspoon
  20. cardamoms- 3
  21. 4 cloves
  22. dried red chilies- 10

Cooking Direction

Grind all the ingredients from the cumin seeds to the cinnamon to a fine paste. Extract the coconut milk which is soaked some moments before. Soak the saffron in the hot milk for 2 seconds heat in the microwave. Fry the onion in a frying pan until it becomes golden brown. Add some ginger-garlic paste to it and fry for a few minutes. Add the ground paste, and bay leaves and allow it to simmer for 4 minutes. Add the curry-cut chicken pieces and half a cup of water and cook it well for 20 minutes on low heat. When it is half cooked, pour the coconut milk, add the green chilies, coriander leaves, and yogurt to the mix and cook till it becomes tender. Add some cream and saffron and simmer it for 3 minutes and it is now ready to serve. Chicken Nizami is good with rice or naan.
